Midwest-based grocer Fresh Thyme Market has released its annual “Top 10 Trends” report, forecasting what shoppers can expect to see in stores in 2027.
The report, developed in partnership with data and insights provider SPINS, looks at emerging consumer behaviors, evolving wellness priorities and grocery product innovations. From new twists on common grocery staples to new ways of adding fiber, protein and other nutrients to everyday life, the trends point to a shopper who is asking for more.
“Grocery shoppers are redefining wellness on their own terms,” said Cecily Martinez, registered dietitian at Fresh Thyme Market. “People want fresh, organic and better-for-you foods that deliver meaningful benefits without adding more complexity to their lives. We’re seeing growing interest in innovative products such as nutrient-dense foods, functional ingredients and globally inspired recipes that bring enjoyment and purpose to everyday eating. The 2027 trends reflect a consumer who is informed, intentional and is looking for a basket of items that are innovative, curated, convenient, and support their long-term well-being goals.”
Fresh Thyme said it monitors what’s new and evolving across food, nutrition and wellness while partnering with local brands to bring new grocery items to its shelves.
Fresh Thyme Market’s Top 10 Trends for 2027 are:
Global Flavor Mashups: Brands are blending ingredients, techniques and flavor profiles from multiple culinary traditions, from miso mayo and gochujang barbecue sauces to chili-mango snacks and condiments with international inspiration. Example products include Kettle Foods Spicy Kimchi Potato Chips, Boar’s Head Mango Jalapeño Hummus and Bachan’s Japanese Hot Honey BBQ Sauce.
The Brain Food Era: Shoppers are looking for food and supplements that support focus, memory and healthy brain aging. Omega-3-rich foods, antioxidants and functional ingredients such as mushrooms and creatine will continue making their way into more everyday products. Examples include Sunwarrior Active Creatine Monohydrate Powder, Trip Mindful Blend Sparkling Water and Second Nature Antioxidant+ Smart Mix.
Bite-Sized Joys: Indulgence is more about small moments worth savoring than special occasions. Consumers are looking for premium snack items, mini desserts, specialty beverages and other little luxuries that bring comfort and enjoyment without feeling over the top. Examples include Tru Fru Frozen Chocolate Covered Strawberries, Le Chic Gourmet Original Macarons and Gelato Boy Caramel Crunch Cones.
Fiber First: Beyond its established connection to digestive health, consumers will look to fiber as part of a broader approach to satiety, balanced nutrition and overall wellness. Fresh Thyme expects to see more breads, cereals, snacks, beverages and everyday staples placing fiber front and center in its aisles. Examples include Olipop Prebiotic Soda, Brami Protein Pasta and Hero Seeded Bread.
Sprinkle Culture: Shoppers are seeking simple ways to personalize meals. Sauces, seasonings, crunchy toppings and other add-ons will give consumers more control over flavor, texture and nutrition, turning familiar meals into something new. Examples include Manitoba Harvest Hemp+ Chia and Flax Seed Mixture, Momofuku Original Chili Crunch and Mike’s Hot Honey Infused With Chilies.
More in Every Bite: Busy schedules, evolving eating habits, wellness goals and the growing popularity of GLP-1 medications are driving demand for convenient groceries that deliver meaningful nutrition in smaller portions. Items that combine protein, fiber, healthy fats and other nutrients will help shoppers make every bite count. Examples include Pirq Plant-based Protein Shake, Vital Pursuit Herb Chicken Bowl and Purely Elizabeth Vanilla Blueberry Almond Cereal.
Fresh from the Fridge: The refrigerator is poised to become an even bigger snacking destination in 2027, with consumers seeking fresher snacks that don’t compromise on quality or nutrition, such as protein-packed bites, dips, chilled beverages and snackable produce. Examples include True Story Snack Packs, Oh Snap! Dilly Bites Dill Pickle Snacking Chips and Siggi’s Probiotic Drinkable Yogurt.
Elevated Meal Shortcuts: Fresh marinated proteins, prepared vegetables, meal kits and ready-to-heat entrees will give shoppers nutritious and satisfying meals with less time and effort. Examples include Mighty Spark Tomato Basil & Garlic Ground Chicken, Kevin’s Chicken Fajitas Skillet Meal Kit and Fresh Thyme Market Zoodle Twirls.
The Resourceful Kitchen: Sustainability and resourcefulness will go together as shoppers look for versatile items that help extend food freshness, reduce waste and can be used across multiple meals. Examples include Cascadian Farm Organic Stir-fry Blend, Fresh Thyme Market Rotisserie Chicken and Cucina & Amore Pesto Alla Genovese Basil.
Frozen Passport: The freezer aisle will become a stop on shopping trips. Meals inspired by global cuisine will give shoppers a way to experiment with international cuisine at home, and frozen foods will make it easier to discover new flavor profiles without spending hours in the kitchen or breaking the bank. Examples include Laoban Sesame Chicken Bao Buns, Saffron Road Chicken Pad Thai and Deep Indian Kitchen Butter Chicken With Rice.
Bonus Trend – The Ocean Pantry: Tinned seafood, seaweed snacks, kelp-based ingredients and algae-powered products will gain momentum as consumers explore sources of protein, omega-3s and other nutrients. Growing interest in responsible sourcing and sustainability will fuel curiosity around marine foods. Examples include Nordic Naturals Algae Omega Supplement, Safe Catch Elite Pure Wild Tuna and Fresh Thyme Organic Spirulina Superfood Powder.
Fresh Thyme Market’s mission is to foster healthier communities by offering fresh, organic and better-for-you food, vitamins and body care products. The retailer focuses on three core pillars: quality, experience and community.
