Vallarta Supermarkets will open a 60,000-square-foot store April 1 at 9040 Foothill Blvd. in Rancho Cucamonga, California, marking the chain’s sixth Inland Empire location and its second store opening of 2026. The grand opening will begin with a ribbon-cutting ceremony followed by community giveaways, food sampling and live entertainment.

The Rancho Cucamonga store is the first in the Vallarta network to feature Costa de Oro, a new in-store seafood restaurant concept the company plans to roll out across all future locations. The made-to-order menu will include seafood tostadas, shrimp tacos and other fresh preparations.

Store highlights

Beyond Costa de Oro, the store carries Vallarta’s full lineup of signature departments. The Carnicería features the chain’s Original Carne Asada, marinated in house with proprietary spices. The Cremería stocks traditional cheeses including queso fresco and cotija. Fresh ceviches and aguachiles are prepared in small batches throughout the day at the Pescadería and in-house Cevichería. La Cocina offers hot, ready-to-eat meals inspired by Mexico and Central America, and a made-to-order guacamole station allows shoppers to customize their order on the spot.

The Panadería produces pan dulce and hand-decorated cakes daily. Corn and flour tortillas are made in-house. The Dulcería carries candies, piñatas and celebration supplies. A Florería rounds out the destination-store format with arrangements and potted plants.

The location also carries hand-rolled sushi, fresh-pressed juices, fruit bowls with Tajín and chamoy, and a wide selection of organic produce sourced locally and internationally. Delivery is available through DoorDash, Uber Eats and Instacart.

Community investment

The opening will create 219 jobs in Rancho Cucamonga. Vallarta will donate $7,500 to five local schools and charitable organizations as part of the grand opening celebration. The first 300 customers through the door will receive reusable bags filled with Vallarta groceries.

Wendy Rubiano, director of marketing at Vallarta Supermarkets, said the Rancho Cucamonga opening reflects the company’s broader growth philosophy.

“We’re proud to open our doors as Rancho Cucamonga’s neighborhood store, committed to supporting local families and investing in the strength and future of this community from day one. As we continue to grow, our focus remains on opening stores that prioritize fresh, authentic food and meaningful community engagement,” Rubiano said.

Vallarta’s expansion momentum

The Rancho Cucamonga opening follows the chain’s first Arizona location and its Colton, California store, which opened in May 2025. Founded in 1985, Vallarta operates 64 stores across California and Arizona with more than 9,000 team members.

The Costa de Oro seafood restaurant concept debuting here positions Vallarta to differentiate its in-store experience as it continues expanding into new markets.
